At the moment, I am suffering from major eye strain. In addition to doing school work, I spent today instablogging, reading & analyzing “The Art of Frozen” (and completely nerding out over it) and now, writing this post…in low light. My eyes feel like they’re going to fall out of my head, but I’m determined to fulfill my commitment to blog everyday this month. Since my eyes are the only thing on my mind, at the moment, I decided to share my love for a tasty vegetable that promotes eye health: the sweet potato.
Sweet potatoes are full of beta carotene, which promotes eye health and prevents cancer! Three other cancer preventing compounds in sweet potatoes are high levels of vitamins C & D, and LOTS of antioxidants.
Sweet potatoes, in recent studies, have also been show to have great blood sugar balancing properties. This is, most likely, due to the fact that sweet potatoes are one of earth’s best sources of magnesium.
There are so many ways to prepare sweet potatoes. They can be cooked a variety of ways and flavored in a savory or sweet fashion. You can slice them into sweet potato fries, mash them, mix them with quinoa or beans and turn them into a burger patty, roast them, or sauté them. My favorite way of preparing sweet potatoes is quite simple:
Bake them at 400 degrees for 50 minutes to an hour. Slice them open and sprinkle on coconut sugar and cinnamon. You might as well be eating dessert!
